Recipe Pork Ribs Basted With Cathup 香露京燒骨

1.陳皮1片用溫水泡軟後,取刀刨淨皮內側的網囊,留淨皮剁成細末備用。

2.300g小排切6公分長段,加入蛋1顆,玉米粉1大匙,太白粉1茶匙,穀盛糯米醋1大匙,鹽1/4匙後拌勻,醃約10分鐘。

3.小排入油鍋以165度c油溫先炸約2分半鐘,再提高油溫至180度c,續炸約30秒撈出

4.鍋內用殘留少量油脂,爆香陳皮後,放入炸好的小排,再放入穀盛糯米醋1大匙,穀盛醇米霖1大匙,蕃茄醬1茶匙,穀盛素食烏醋1茶匙,糖1茶匙,萬家香陳年醬油1/2茶匙,拌炒均勻,即可起鍋排盤。
