Almond Tofu (Pudding)

Despite the name, its actually neither almond, or tofu! Its a popular Chinese dessert loved for its lightness and creamy jelly texture that is similar to pudding or silken tofu, with a soothing almond flavor that comes from apricot kernals.

Ingredients

  • 3 tbsp HealthStyle Apricot Kernal Powder (Unsweetened)
  • 500ml of milk
  • 10g gelatin sheet or powder

Toppings:

  • Honey or syrup
  • Crushed nuts
  • Sliced Fruit

Instructions

  1. Add in apricot kernal powder alongside your milk to a safe container and microwave for about 40 seconds.
  2. Soak your gelatin sheet in water until softened, then mix into your warm apricot kernal milk mixture until it is fully dissolved. 
  3. Let it sit until cool, then refridgerate overnight.
  4. Once firm, make grid slices into the container then drizzle with honey, add crushed nuts, or incorporate other toppings of your choice!
