Recipe Squid Rolls with Three Cups Sauce 中卷三杯

鑫龍中卷1包,蒜15g,青蔥30g,薑10g,辣椒約10g,九層塔50g,八角純淨上等蔴油30cc,萬家香陳年醬油60cc,米酒60cc,台灣維生超級冰糖1小匙,水1/2杯左右

做法:

1.蒜頭去皮切片,薑與辣椒切片,蔥切段,九層塔洗淨備用,鑫龍中卷以1CM寬切成圈;

2.鍋裏放麻油小火爆香薑片,待薑片略焦推到鍋邊,上蒜頭微炸,再將蒜推到鍋邊,爆香蔥段。

3.轉大火,下中卷與辣椒翻炒,續下醬油、冰糖燒開,沿鍋邊嗆米酒,湯汁收到濃稠的程度再放入九層塔翻炒兩下就起鍋盛盤。
