芝麻燒麵包解凍之後 ,所含濕氣多些 ,最好複熱一下讓濕度蒸發後,麵包纖維明顯 ,嚼感才開始顯現 ,香氣全出 ,進到口中 ,異常順口 ,是老師傅的真傳。
烘培方式 :
1.
由冷凍冰箱取出 ,置於室溫中解凍30分鐘。
2.
烤爐設定溫度 : 375ºF (~190ºC)
3.
烘烤時間 : 烘烤2~3分鐘
 
Baking Instructions:
1.
Defrost frozen sesame blazing bread in room temperature for 30 minutes.
2.
Preheat oven to 375ºF (~190ºC).
3.
Place sesame blazing bread on middle oven rack and bake for 2~3 minutes.

How to prepare Frozen Puff Pastry Sheet?

 Puff Pastry Chowder Soup 酥皮濃湯

烘培方式 :
1. 先煮好ㄧ鍋個人喜好的濃湯, 如玉米濃湯, 馬鈴薯濃湯, 海鮮濃湯等
2. 烤爐設定溫度: 425°F
3. 使用烤爐專用的湯碗, 每碗盛入7分滿的湯
4. 起酥片不用解凍, 直接取出使用, 於每一碗上蓋一片起酥片, 再塗上ㄧ層蛋水 
5. 烤約15-17分 (著色前請勿開烤箱, 因為會塌陷, 等側邊層次稍硬才可出爐)
Baking Instructions:
1. Prepare a pot of chowder soup of your choice, such as corn chowder, potato chowder and seafood chowder, etc.
2. Preheat oven to 425°F degrees
3. Use soup bowls designed for use in oven. Pour chowder up to 2/3 of the bowl.
4. Place a piece of frozen puff pastry sheet on each bowl and apply egg wash on the surface. Do not defrost.
5. Bake for 15-17 minutes. (Do not open the oven before the puff pastry sheets change color, or else the puff pastries may fall. Wait until the side hardens before removing from oven.)
 
Puff Pastry Sweet Bread 
酥皮甜麵包

烘培方式 :
1.
烤爐設定溫度 : 上火390ºF (~200ºC)/下火 355ºF (180º)
2.
甜麵包發酵38℃ 約60分鐘
3.
起酥片不用發酵,微軟時表面塗蛋水,蓋在甜麵包上
4.
烤約12-15分(著色前請勿開烤箱,因為會塌陷,等側邊層次稍硬才可出爐) 
Baking Instructions:
1.
Preheat oven: Upper oven to 390ºF (~200ºC) & Lower oven to 355ºF (~180ºC).
2.
Let sweet bread rise for 60 minutes.
3.
After pastry sheet defrost, apply egg wash on the surface and place on sweet bread.
4.
Bake for 12-15 minutes (Do not open oven until pastry sheet turns color and hardens.)

?
烘培方式 :
1.將麵糰於間隔5公分 的距離排列在烤盤上常溫解凍
2.以90°F發酵約40分鐘至原來的2~2.5倍
3.烤箱預熱350°F
4. 在發酵完成麵糰表面刷上一層薄薄的蛋液
5. 將麵糰移入預熱完成的烤箱內烘烤約8~10分鐘,至成品表面成金黃色即可出爐


Baking Instructions:
1. Defrost the frozen croissant dough on a baking tray. Keep 2 inch space between each croissant.
2. Keep 90 ° F to ferment for about 40 minutes until the croissant become 2-2.5 times bigger.
3. Preheat oven: 350°F
4. Brush on a thin layer of egg.
5. bake for 8-10 minutes until the top of the croissant turns to golden colour.

How to prepare Puff Pastry Dough Strip?

烘培方式 :

1.將麵糰於間隔5公分 的距離排列在烤盤上常溫解凍
2.將表面刷上一層水或牛奶
3.麵團解凍變軟後,輕輕捲起四到五圈成螺旋狀
4.依個人喜好在麵團上撒適量糖粉或起司
5.烤箱預熱350°F
6. 將麵糰移入烤箱內烘烤約13~15分鐘,至表面呈金黃色即可出爐

 
Baking Instructions:
1. Defrost the frozen strip dough on a baking tray. Keep 2 inch space between each croissant.
 2. Spray a thin layer of water or milk on top of the strip.
 3. Twist the strip 4 - 5 times to create the shape
 4. Spread some cheese or powdered sugar as you like 
 5. Preheat oven: 350°F 
 6. bake for 13-15 minutes until the top of the pastry strip turns to golden colour.

How to prepare James Bun's Cookies?

烘培方式 :
1. 產品自凍庫取出,不必解凍,直接烘烤即可。
2. 烤爐設定溫度 : 上火 355ºF (~180ºC) /下火 375ºF (~190ºC)
3. 烘烤時間 : 烘烤10分鐘取出。
4. 降低溫度上下火各降50ºF (10ºC),烤盤轉向再入爐烘烤 5分。
 
*烤盤轉向目的是要讓內外面產品色澤均勻。
 
Baking Instructions:
1. Preheat oven: Upper oven to 355 ºF (~180ºC) & Lower oven to 375ºF (~190ºC).
2. Bake cookies for 10 minutes.
3. Lower both upper and lower oven by 50ºF (10ºC), rotate the baking tray and bake for another 5 minutes.

烘焙方式:
1. 由冷凍冰箱取出, 將24個蘿蔔絲酥餅排擺於烤盤上, 不必解凍, 直接放入烤爐烘培.
2. 烤爐設定溫度 : 上火 490 ºF (~255ºC) /下火 390ºF (~200ºC)
3. 烘烤時間 : 烘烤17分鐘
 
Baking Instructions:
1. Preheat oven: Upper oven to 490 ºF (~255ºC) & Lower oven to 390ºF (~200ºC).
2.Place 24 Chinese Delicacy with Radish on the baking tray and bake for 17 minutes. (Do not defrost.)
